What flour would you use for the gluten free folks? Thinking almond perhaps?

I would not use almond flour - it really does not behave the same as a starch/carb based flour. I can't recommend any specific type of gluten free flour, but I don't see why something like 1:1 or cup4cup wouldn't work.
