Could anyone hazard a guess at how much fresh spinach to use, instead of frozen

It doesn't seem to be that critical; it's worth noting that the weight of fresh spinach (or other greens) can vary wildly depending on how wet they are.

You need one pound of fresh to equal 10 ounces of frozen.
