Question about cream sauce in Halibut en Papillote
Recipe is from Cookwise and I have made it before. The original recipe calls for a roux based cream sauce. My question is would Mrs.Larkin's homemade marscapone work? Would I have to thicken it?

Most mascarpone has a definite sweet taste to it. I haven't made hers yet, so I can't say whether or not that would be a problem, either. Hopefully not.
