You could use it, yes. However, I suspect what the recipe really is referring to is a product known as "Morton's Tender Cure". This recipe is a riff on salami, similar to one my mother used for years to make quick summer sausage. Tender Quick also contains a small amount of sugar, which isn't in the Prague Powder. Just use one or the other- but not both. Also take care not to use Prague Powder #2, which is meant for dry cured meats which will hang and ferment for a long time.
