Maybe Eric Kim (recipe author) will respond.
Haven't done it for ice cream, but have used coconunt milk (full fat, canned) as a replacement for heavy cream in other recipes.
I'm guessing that's also the ONLY non-dairy replacement that would work for ice cream...because it has about the same percentage fat in its composition as heavy cream.
The other replacements (soy, nut, rice milks) are lower in fat, and might freeze but wouldn't have the same rich texture.
