Menu for Red Snapper Veracruz- suggestions please!

I am making Red Snapper Veracruz this weekend. What are your suggestions for possible sides? I am making a salad with butter lettuce, avocado and a tomatillo/buttermilk dressing but I wanted a little something more with it.

I like rice with fish. Maybe a pilaf-style rice with a little ancho chile powder and cumin, or cilantro & parsley, something like that...
