What to do with yeast??????????????????????????????????????

Hello, all! I am cleaning out my kitchen for a move from New Orleans to St. Louis! I found two packets of yeast that expire tomorrow!!! If the yeast is still kickin’ what are some unique yeasty goodies you all suggest?? Side note: I am currently on rotations for pharmacy school and tomorrow I have a RARE day off! I would love suggestions by then!!!

Brioche knots (from the Berkeley cooperative the Cheese Board) are one of my favorite simple yeasted things to make. They freeze well also. I found the recipe from their cookbook posted here: http://www.supereggplant.com/?p=415

Other side of the coin here... if they technically expire tomorrow, they may or may not still be any good, especially if they are "Active" yeast as opposed to "Instant" yeast. If you decide to bake, and the packets are Active Yeast, please proof to make sure the yeast is still viable.
