Recipe says to simmer for 2 - 2 ½ hours. Lid on or off? Instead, can I put in the oven? What temp, lid on or off?

Yes oven ok.
Covered better.
300F for 2.5 hours.
Test.
Cook longer if needed.

Thank you, I'll try that next time. Today I did it stove top, no lid, had to add about 1.5 cups more water. Delicious.

There's nothing wrong with uncovered, but I find it has two problems ---one of which you encountered (liquid evaporates or boils off, so you need to add more as you did. Other is possible splatter, which can be avoided by using a larger-than-expected pot.

May I suggest that you correct the recipe to say "lid on"? Since it did not specify, I did lid off.
