Can this be veganized with coconut oil?

I’m definitely going to try the recipe as is but could an equal amount of coconut oil be substituted for the butter to veganize the recipe? I’ve got some friends that are vegan and it would be great to add something like this to my back pocket. Thanks!

I will need to do that and have had great sucess using organic, butter-flavored coconut oil for that purpose (can find that at WF stores...). It has worked great in oatmeal/granola toppings for crisps and in some gingersnap and graham cracker crusts for baked goods.
