Gruyere is a hard cheese. Why not try one time, Manchego? Wonderful flavor and it is made from sheep, easier on digestion.

You can also get basic Gouda at an affordable price.

You could try another mild cheese such as Fontina. Havarti or Swiss Emmental or Jarlsberg might work too.
