Has anyone tried this with buttermilk?

I tried this with fresh spinach this morning to make a filling for an omelet and thought it worked very well. I plan to try it tomorrow with eggs, but was wondering if buttermilk would work as well. I frequently have buttermilk left over and this would be a good use for it.
