I think the best kind of desserts when looking for flourless recipes are ones that are naturally that way instead of subtitutions. Custards like flan and creme brulee are great alternatives as well as all kinds of meringues , roasted fruit and sorbets. For this hot weather though, I only crave ice pops. i love baked apples with dried fruit, nuts, and spices topped with fresh ricotta, whipped cream, ice cream, or mascarpone. i also love eggy custards, warm or cold.
