Brian time and bleached flour or not

2 questions... 1- what's the max time you can leave the chicken in the brine and 2- does it matter if you use bleached flour or not?

I wouldn't say there's a specific max time, but I also wouldn't brine more than a day in advance—the meat will start to break down and become mushy and you don't want to chance that! Bleached and unbleached flour both work here.
