Duck Eggs!?! Ideas to use them, please!
I've just been given 19 unfertilized duck eggs to cook with. They are all different sizes. I'm looking for ideas, please. I'll bake with them, and gently place them on top of a bowl of udon... I do have several weeks to use them up. Thank you!

Lucky you! Use them like you would chicken eggs. Duck eggs are richer and have a love orange yolk. They tend to be a bit larger than chicken eggs, so you might want to weigh the eggs in your baking recipe. Here's my favorite Vietnamese steamed egg meatloaf which is a must on any rice plate meal: https://www.diversivore.com/vietnamese-egg-meatloaf/

Wow, we are definitely making that -- the recipe looks amazing! and I learned a lot from the commentary in the post as well. Thank you!
