2 questions: is 120 grams of salt a mistake? seems like too much to add to water secondly, i think a measurement for the bacon fat would be helpful

Hi Glenna! 120 grams of salt is about 6 tablespoons/half a cup, which goes into a gallon of water to boil a pound of Brussels. You want the water extremely salty to season the sprouts as they boil—they can take a lot.
As for the mayo question, and how much bacon fat to add, this will really depend on how much your 8 strips yield—it will likely be no more than a few tablespoons. No matter how much (or little) you have, mix it together with the vegetable oil before whisking it into the egg mixture to make the mayo.
