Can you make ahead and freeze them? Wan ted to make them for Thanksgiving.

I know you can make regular biscuit dough and freeze that to use later- I've done it plenty of times. I can't say with certainty how well it would work with this recipe, but the only way to really find out is to make a small batch and try it out. I prefer to freeze mine unbaked, because the baking time is only slightly increased- but you end up with a fresh baked product. I don't find freezing and reheating does much for an already baked biscuit. To me, pre-baked and reheated biscuits are always just a little drier and more crumbly than one baked from dough. Being frozen also works in favor of the fat in the short baked product, which should always be kept cold as possible until it hits the heat. But you could try it both ways to see which you might prefer. Or consider mixing and cutting it the night before, and leaving it chill in the fridge until baking time arrives. Biscuits don't take long to bake, and the turkey still has to rest a good half hour or so.
