Any type of broth/stock (depending on the dish), water and verjus.

Depends on what you're making, where the alcohol is used.
In a soup or stew, you could use water, broth, or vegetable juice.
In a cake or baking, use fruit juice, coffee, tea, water (depending on recipe).

Nancy, in a beef stew. Beef stock is ok or water better in replacement of red wine.

Beef stock is better if you have it or can get it.
If not, water is second choice and will work.
