is it ok to roast the veggies 2 days in advance of assembling and baking the pie?

Alongwith preparing the mushrooms and the sweet-p mash, could I also roast the veggies by Friday afternoon and then assemble and bake everything on Sunday morning for an afternoon meal? Would I lose anything in texture or flavor? Many thanks for your inputs!

I think it would work fine - I've roasted root veggies to put in salads and continued to use them for days, and they don't get soggy and retain a good texture.
