Refrigerating pumpkin pie - should I? Or not?

After I make the pumpkin pie, when I refrigerate the pie, do I cover it? And if so, with what? Florida, if it matters.

Be sure to lay a sheet of parchment over the top before covering it with plastic, as the plastic will want to stick, and mar the surface when removed. Take it out of the fridge when you sit down to dinner so that by the time you are ready for it, the pie will have lost some of its chill, and the flavor will be much better and the texture more tender.

Yes! I'd do plastic wrap, or aluminum foil. Otherwise, it may start to take on smells from the fridge and the crust may get soggier than it otherwise will. However, if you don't need to make the pie ahead, I like to make it earlier the day of and let it cool to room temperature—that way the crust stays crispiest and you can really taste all the pumpkin spice (admittedly, I also love it cold from the fridge the next day though).
