My tapioca syrup solidified - help!

I make caramels every year and last year ordered organic tapioca syrup in bulk. It's been stored in my (cool) basement since last December and now appear to have solidified. Almost like coconut oil does. Is it still OK? Do I heat it to be able to add it as a liquid to my recipe?

I've never used tapioca syrup, but since it sounds like you've to plenty to experiment with, I'd try heating it up (and letting it cool again) to see if it reaches the viscosity you're going for. You'd be the best person to judge how the tapioca syrup would cool in your caramels - I'm not sure if the syrup would harden too much in your final candy.
