You could probably use various chocolates in making this recipe, depending on what you have around and/or how sweet you generally like your cookies. "Dark chocolate" is sometimes used to mean unsweetened and sometimes bittersweet (which has about 33% sugar). Bittersweet itself has less sugar than semisweet (about 50%). Again, your choice.
