Can I make a Green Peppercorn Sauce and refrigerate for 5 hours before serving?

Sure. I would suggest taking it through the point of adding the stock, then allowing it to reduce. At that point, go ahead and cool it down and refrigerate it. About 15 minutes before serving, heat it back up, and finally add the cream and butter to bring it all together. If you add them before refrigerating the sauce, there is a good chance your lovely sauce will break when reheated. Happy Holidays to you!
