OK to use a hand held electric mixer?

I don't own a stand mixer, or a paddle attachment.  What is an alternative method for combining the ingredients?

I agree—pulse the dough in a food processor until the dough forms a ball around the blade

That should be fine, or you can also do it in a food processor, pulsing to combine.
