I live alone, can this salad be made with one person?

One more idea - for crispess and texture, I'd make and store the dressing separately, then dress remaining salad just before second serving....

yes, it can be made for one person; either divide ingredients in half, or do as Gammy says and make the full amount. You'll have meals for 2 nights.

All the components can be made ahead separately, so I would think you could divide all and have 2 separate nights of delicious salads. I would in a heartbeat!
