The Bon Appetit website has a recipe for gluten free carrot cake which is very well rated. They used almond flour. You could compare the two recipes or just make the Bon Appetit one instead.

There are several companies which make good quality gluten free baking mixes for this purpose. I have not used any of them myself to make this cake, but I do not see why they would not be acceptable substitutes. The only other things to check would be the baking powder, to be sure the manufacturer used cornstarch as the buffer. You would also need to check the confectioner's sugar for this as well, or make your own version with the food processor. Otherwise, the cake should not need any further adaptions.

+1 to this—King Arthur Flour's gluten-free measure-for-measure flour is excellent! You use it in the same ratio/quantity as the all-purpose flour here, and don't need to add any additional ingredients.
