The recipe for the Farotto and sausage sounds amazing. I’m going to use my instant pot, and I’m thinking of adding some chopped tomatos. When would.

Instant pot and add chopped tomatoes. When should I add tomatoes.

If using fresh tomatoes, I'd stir them into the risotto after it is cooked in the Instant Pot and you've released the pressure. I'd let them sit for a few minutes in the hot risotto, to let them soften a bit. The chopped tomatoes will probably release a fair bit of juice, so you should stir that back into the risotto right before serving. That sounds altogether delicious, by the way.

I make an Instant Pot pasta dish based on a recipe by Marcella Hazan's son, Giuliano, which is similar to this. I add plenty of fresh oregano and parsley. I used canned tomatoes, so I add those right before clamping down the lid and setting the pressure cook cycle. It's so delicious! I'm inspired now to try this recipe, when I can get some farro.

If using canned tomatoes with this risotto, I'd add it right before starting the cooking cycle. ;o)
