You won't need much as it's a grated garnish for 6 bowls, so maybe a 50 to 100g bar, or part of a large bar you have on hand. As to type, I'd buy a good eating (not baking) chocolate with high percentage of chocolate solids (60 or 70%). Flavor - Plain, or a bar with the hot pepper in it would be nice.
