When you cook for 2-3 hours- Top on or no top?

No cover. There's no cover mentioned in the recipe or used in the video. How would it reduce if it were covered? It cooks on the lowest flame and reduces by half. No cover.

i can't imagine cooking this sauce for so long but no matter how long, definitely COVER your sauce or it will dry up.
