If I wanted more yogurt, could I without it being weird? Or should I increase the lemon and eggs proportionately?

Well, my thought is that yogurt mixed with lemon juice is highly acidic, so too much yogurt in proportion to the eggs could throw the dish off balance. That said, it is ultimately your own palate that you need to please so there’s certainly no harm in upping the yogurt a little and seeing how you like it. It may take a little trial and error to get the proportions the way you want them but that’s just part of the process, IMHO.
