With a chocolate version, how much flour would be replaced with cocoa powder? Thinking of attempting a chocolate napoleon with this pastry.

You can find my chocolate puff pastry recipe in my cookbook, The Fearless Baker! I find it’s easier to add some cocoa to the dough, and some to the butter block (though in the video you’re referencing I didn’t add any to the butter to show the layering)!
