discrepancies between video and recipe

In the video, Erin uses 400g bread flour, 200g AP flour and 1 stick of butter. the written directions use less flour and twice the butter. What gives? I started following the written recipe and my dough has no substance, not anything like the dough she took out of her stand mixer.

Hi Kathryn! Thanks again for letting us know about this—we adjusted the bread flour and AP flour measurements per your note, but it looks like the butter measurements in the recipe match those mentioned in the video (https://www.youtube.com/watch?v=zvEQyPj968A) for both the dough and butter block. When you were making your dough, did you use just a stick (or 1/2 cup/113 grams)? Because the flour measurements were just slightly under, the difference shouldn't have caused trouble for you. Let us know if we can still help!

Hi Kathryn! Thank you so much for reaching out—and so sorry to hear that your dough isn't turning out how you'd hoped. Looking into this and will respond here with an update as soon as we can. Hopefully we can save the dough, or at the very least point you in the right direction!
