Hi Lilliana, I am sorry it was not clear, I corrected it. You can use either semolina or cake flour. The semolina gives it a rustic quality and the cake flour is from the original pastry dough recipe.
It works well using either semolina or cake flour. The original recipe is Julia Child’s pie dough or pastry recipe. For a change I swapped semolina for the cake flour and it was wonderful. Thank you so much and let me know how it turns out!!
