Can I put two or three eggs into Debi’s Carrot & Zucchini Kugel to help it congeal? Or does it really do just fine with the tofu?
Incidentally, I don’t have zucchini or carrots on hand, so I am going to use butternut squash zoodles. It will be a little different, but I still think it will work just fine. Thanks!

As a former vegetarian, I can tell you 1/4 cup tofu is used as a replacement for 1 large egg.
If you prefer, use 3 eggs and omit the tofu.
