Because you can’t really cut bone-in thighs into pieces, it’ll take longer to cook than the 10 or so minutes here. I’d recommend braising it in half the fish sauce caramel for at least 40 minutes or so, then adding more sauce as needed because I imagine it’d cook out and reduce pretty significantly.
