Substitute chicken thighs for chicken breasts in Ina Garten's recipe for |Chicken with Herbed Goat Cheese
I cannot find skin on, bone in/out chicken breasts and I wondered if using thighs would work Chicken is too expensive here to have a recipe not turn out well.

Yes, chicken parts can generally be changed in a recipe, depending on what's available to you.
In this linked article there is a useful chart that shows the desired internal temperature for chicken so that it's both cooked thoroughly (safe to eat) and still moist (not overcooked, dry or rubbery).
