I just made the snickerdoodle shortbread but mistakenly used two cups butter instead of one. Any way to salvage it? It's baked but mostly a crumbly

layered (with pudding, ice cream, or yogurt sweetened with honey/agave/jam/or maple syrup) in a parfait or on ice cream. or a frozen ice cream pie (I have a recipe for a frozen unchurned ice cream pie made with cream cheese if you have on hand. It was my mother's friend's recipe and I have to say it is just delicious: https://food52.com/recipes/25452-mrs-owen-s-unchurned-ice-cream-cake

Or refrigerator cake - British dessert that uses cookies, cream, maybe fruit. BBC good food, Guardian, or Delia Smith webvsitesxwill have recipes.

Hi Karen! If it's already out of the oven, sorry to say there's not much to do at this point. Depending on what the texture is like, maybe you can turn it into something else besides a cookie—say, a streusel to sprinkle on top of ice cream, yogurt, or fruit?

Maybe also a cookie crumb crust for a pie or cheesecake?
