Hi there! Looks like you add it in Step 7, where it says: "Scrape the remaining egg whites into the bowl and scrape the chocolate from the cutting board over the top."

It doesn't say when to add the 3oz. of dark chocolate that you've left on the cutting board. "until needed"?
