If the extra baking doesn't work, another useful technique (been there, done that) is to slice the bread, then grill it do the middle part finishes cooking and firms up. Then use normally.
Hi there! I haven't tried this recipe before, but I think if you lower the temperature of the oven and extend the baking time (I would start with 10 minutes) that might do the trick. I hope that helps!
