What do you do with the leftover veggies?

Seems like a waste to just throw them out specially since they must carry so much flavour now, so I'm wondering if there's any special uses for them at the end stage? Thank you!

When I make roasted veggies, I usually make extra just to make soup with them. You can just zizz them up in the food processor with some chicken or vegetable broth if you're feeling lazy.

I usually sauté a bit of onion and garlic in a sauce pan, put the veggies in with a can of broth and bring it to a boil. Then, carefully put it in the food processor and zizz it up.

Sometimes I'll add some curry powder or smoked paprika for a different flavor altogether.

Hi Gingarr! Great question. Since the veg will all be rather soft (mushtown) after 4 hours of pressure cooking, I'd recommend pureeing for a mash or vegetable soup. For a mash, just puree the veg until smooth, and maybe finish with a bit of butter or olive oil. For the soup, you can thin out that puree with the bone broth or even just some water. They'll both probably need a heavy hand of salt (though the veg have taken on a good amount of bone flavor, they'll need to be helped along with some seasonings).
