Can I use Alternate baking pans ok?

I don’t have a Bundt cake pan. Will a Standard loaf pan or 11x17 pan work? How will it change the cooking times? Thank you!

Or, make half the recipe, which should fir in either one of the loaf pan or 11x17.

Thanks for this, Nancy -- but while the loaf pan *may* fit the raw batter, I can't totally promise there won't be spillage as the cake bakes. The cake grows another 30-40% taller in the oven-- just FYI!

I see your worry, Coral.
Here's my reasoning:
the average capacity of a bundt pan is 12 cups and capacity of a loaf pan is 8 cups.
So loaf pan has 2 cups or 1/3 more space than half the original recipe.

Hi Ruth! Great question. This recipe produces * a lot* of airy batter (because of the whipped egg whites), so a standard loaf will be too small, unfortunately. Same with your 11 x 17" pan—it may not be tall enough to catch the cake as it grows in the oven. Do you have access to a disposable lasagna pan (like this one https://i.pinimg.com/originals/5d/c1/eb/5dc1ebe3a266fbcd9e32671f8a775c12.jpg), or something of a similar size (namely, depth)? And the cook time should actually be the same, around 50-55 minutes.
