Making risotto with water versus chicken stock

I recently saw a recipe where water was used instead of chicken stock. Does anyone have feedback on this method?

I’ve also seen risotto recipes that use only wine for the liquid. I think making it with water is fine, so long as you add some flavor along the way, whether it’s herbs, vegetables, saffron, etc.

Thanks, Happygoin. The recipe triples the normal parmesan cheese and I will also add peas, lemon, and mint.
