Could I sub honey for molasses in this recipe?

You could. I would recommend using slightly less honey than molasses (try 3 Tablespoons) as it is somewhat sweeter. If you aren't specifically after a honey flavor, and are simply don't have the molasses, another option would be to up the brown sugar to 1c+2tbs.
