Hi Joanne -- yes, it's correct! Quinoa recipes often call for a 2:1 ratio of water to quinoa. But by cooking the quinoa in less liquid, I find that the texture is better (fluffy versus soggy). But totally your own call on the amount of liquid -- if you've found a ratio that works well for you, then feel free to use it. The use of coconut water vs. regular water won't change things.
