Can you use saltines with this recipe?

Will the texture or flavor be affected?

Flavor will be fine. Texture is better with Ritz crackers or grahams. I've made these with Clubhouse crackers which are similar to saltines and I wasn't all that crazy about the texture. I think it's because the crackers didn't disintegrate like a cake. Flavor was really great though. Like key lime pie :)
