Will it still taste good with 66% cacao chocolate?
I have some 46% I could mix in to lower the percentage (12oz 66% to 4oz 46% to make 16oz 61%). Is that preferable to using just 66% alone?

According to the interview (https://food52.com/blog...) it may make it set firmer and take a second to melt in your mouth, but if you like the flavor of the 66% go for it! If the 46% has milk in it it could also throw off the texture.
