Question about using boneless/skinless pork shoulder

Hello! I have a beautifully fresh 3 lb pasture raised pork shoulder but it's skinless and boneless. Can I roast it with this method still? I worry about it drying out. How about using a Dutch oven? Does that have the same effect?

Hi Katherine! I would worry about it drying out also. Could you cover it with some fat like pork belly? That might help it.
