The anchovy isthere to give salt and umami tastes. I would suggest 1 tsp capers or chopped kalamata olives as a replacement. Since there are already capers in recipe, either add another tsp or throw in a little bit of chopped olive. That will maintain the balance of flavors on the dressing.
