Rest after final fold? Straight into fridge after final flip/fold or keep out for 30 minutes more?

Do you leave the dough to rest on the counter for a final 30 Minutes after the last fold/flip? Or straight into the fridge after the last one? Thanks!!

From the instructions, it looks like the recipe author lets this challah dough sit for 30 minutes after the final fold, and before refrigerating. If that's not convenient, no harm would be done by putting it into the fridge right away - it's got a long rest ahead of it for the yeast to continue developing.

I made this challah and am fairly certain that I put it in the fridge right away. It turned out well!
