Troubleshoot for homemade mozzarella cheese. What am I doing wrong?!

I used grade A pasteurized milk from the grocery store, followed the recipe perfectly. I was able to cut the curds into chunks BUT after I heated it up to 105° f I started taking out the curds instead of letting them sit for 5 minutes and then draining them. I want to try it again tomorrow but I do not want to end up with wet ricotta curds again. Help!! Also Can I use vinegar in place of the citric acid?
