Can I use spreadable cream cheese instead of the brick if I'm in a pinch?

It depends on the recipe but they are not the same animal. Spreadable cream cheese is typically whipped (adding air and reducing volume so you're using less than brick) or has stabilizers that may change your recipe. Same goes for low fat or non fat cream cheese.
